Prep Time: 20 minutes
Chill Time: 1 hour
Total Time: 1 hour 20 minutes

Serves: 12 bites

Ingredients

  • 1-1/2 cups old fashioned rolled oats
  • 1/4 cup hazelnut chocolate spread
  • 1/4 cup almond butter
  • 2 tbsp. honey
  • 4 oz. cream cheese, divided
  • 1/2 tsp. salt
  • 2 scoops (100 g.) chocolate whey protein
  • 2 oz. cold brew coffee
  • Cocoa powder for dusting

Directions

  1. In a food processor, combine rolled oats, hazelnut chocolate spread, almond butter, honey, 2 oz. cream cheese, salt, chocolate whey protein, and cold brew coffee. Pulse slowly until mixture just comes together to form a coarse, sticky dough. Chill for 1 hour.
  2. Divide dough into 12 balls about 1.5 inches in size. Cut remaining cream cheese evenly into 12 pieces. One at a time, press a deep thumbprint into each dough ball and fill it with a piece of cream cheese, gently pressing the mixture to cover. Reroll to shape and repeat with remaining dough.
  3. Dust protein bites with cocoa powder and eat immediately, or store in an airtight container in the fridge for up to 2 weeks or the freezer for up to 3 months.
